Shabu-Shabu is a pot of boiling water used to cook food at the table. Paper-thin slices of marbled beef or chicken are cooked by dipping them into the pot of stimmering kombu (kelp) broth.

Owner and Chef Kaz Sato has a history on the Santa Barbara dining scene, having owned and operated Sato’s Kitchen and Montecito’s Restaurant Kai before opening Kai Sushi in 2000.
